  • 2 tablespoons olive oil
  • 500g chorizo sausages, chopped into 3cm pieces
  • 150g rindless bacon, roughly chopped
  • 2 cloves garlic, chopped
  • 1 teaspoon paprika
  • 400g can diced tomatoes
  • 2 cups chicken stock
  • 3 cups frozen mixed vegetables
  • 1/2 cup parsley, chopped
  • 1 onion, halved, thinly sliced


  • Step 1
    Heat oil in a large, heavy-based saucepan on high. Cook sausage pieces for 1-2 mins each side until brown. Drain on kitchen paper.
  • Step 2
    Cook bacon and onion in same pan for 5 mins on medium heat until onion is soft. Add garlic and paprika and cook for 1 min. Add tomato and stock and bring to the boil. Return sausages to pan and simmer on low for 10 mins.
  • Step 3
    Add vegetables and simmer uncovered for 10 mins. Stir through parsley. Serve with steamed rice.
