  • 1 1/2 tablespoons olive oil
  • 800g beef chuck steak, trimmed, cut into 4cm pieces
  • 1 brown onion, halved, cut into thin wedges
  • 2 garlic cloves, thinly sliced
  • 1 cup port
  • 1 1/2 cups Massel salt reduced chicken style liquid stock
  • 3 large sprigs fresh rosemary
  • 3 dried bay leaves
  • 2 strips orange rind, pith removed
  • 1/4 cup chopped fresh flat-leaf parsley leaves
  • Mashed potato, to serve


  • Step 1
    Heat 1 tablespoon oil in a large, heavy-based flameproof casserole dish over high heat. Season beef. Cook beef, in batches, stirring, for 5 minutes or until browned. Transfer to a bowl.
  • Step 2
    Add remaining oil to dish. Add onion. Cook, stirring, for 5 minutes or until onion has softened. Add garlic. Cook, stirring, for 1 minute. Add port. Simmer, stirring, for 3 minutes.
  • Step 3
    Return beef to dish. Add stock, rosemary, bay leaves and orange rind. Reduce heat to low. Cook, partially covered, for 2 hours or until beef is tender and liquid reduced.
  • Step 4
    Remove and discard rosemary and bay leaves. Season with salt and pepper. Stir in parsley. Serve with mashed potato.
