Ingredients:

  • 70g (1/4 cup) olive tapenade
  • 2 x 385g pork scotch fillet schnitzels
  • 160g pkt baby spinach leaves
  • Olive oil spray
  • 3 garlic cloves, thinly sliced

Method

  • Step 1
    Preheat oven to 160C/140C fan forced. Spread olive tapenade over pork. Top with half the spinach. Roll up and secure with toothpicks.
  • Step 2
    Spray an ovenproof frying pan with olive oil and heat over medium heat. Cook pork, turning, for 2-3 minutes or until browned. Stir in garlic for 1 minute. Add water and tomato sauce. Cover and transfer to the oven. Bake for 1 hour. Add potatoes. Cook, covered, for 30 minutes. Stir through remaining spinach. Stand, covered, for 5 minutes, or until wilted. Sprinkle with the basil.
