  • 1 tablespoon extra virgin olive oil
  • 1 small brown onion, chopped
  • 1 garlic clove, crushed
  • 1 tablespoon balsamic vinegar
  • 700g bottle gluten-free tomato passata
  • 2 cups frozen baby green beans
  • Pinch of caster sugar
  • 2 cups frozen broad beans, thawed, peeled
  • 1/2 cup frozen peas
  • 2 tablespoons chopped fresh basil leaves, plus extra leaves to serve

    Heat oil in a small flameproof casserole dish over medium heat. Add onion. Cook, stirring, for 5 minutes or until tender. Add garlic. Cook for 1 minute or until fragrant. Add vinegar. Cook for 1 minute. Add passata, green beans and sugar. Season with salt and pepper. Bring to a simmer. Reduce heat to low. Simmer, stirring occasionally, for 6 to 8 minutes.

    Stir in broad beans, peas and chopped basil. Cook for 2 minutes or until sauce is slightly thickened and peas are warmed through. Sprinkle with extra basil. Serve.
