Ingredients:

  • 500g packet fresh gnocchi
  • 1 tablespoon olive oil
  • 750g chicken thigh fillets, cut into 3cm pieces
  • 2 leeks, halved, thinly sliced
  • 200g swiss brown mushrooms, quartered
  • 1 tablespoon fresh thyme leaves
  • 4 garlic cloves, thinly sliced
  • 2 tablespoons plain flour
  • 3/4 cup Massel chicken style liquid stock
  • 3/4 cup Bulla Cooking Cream
  • 1/2 cup finely grated parmesan
  • Fresh thyme sprigs, to serve

Method

  • Step 1
    Cook gnocchi in a large saucepan of boiling salted water, following packet directions, until tender. Drain.
  • Step 2
    Meanwhile, heat oil in a large saucepan over medium-high heat. Add chicken. Cook, stirring, for 5 to 7 minutes or until browned. Add leek. Cook, stirring, for 5 minutes or until tender. Add mushroom, thyme and garlic. Cook, stirring, for 5 minutes.
  • Step 3
    Add flour. Cook, stirring, for 1 minute or until chicken mixture is coated. Gradually add stock and cream. Cook, stirring, for 2 minutes or until smooth and combined. Bring to the boil. Reduce heat to medium. Cook, stirring occasionally, for 5 minutes or until mixture thickens slightly and the chicken is cooked through. Transfer chicken mixture to an 8-cup-capacity flameproof dish.
  • Step 4
    Preheat grill to high. Spread gnocchi evenly over chicken mixture. Sprinkle over parmesan. Grill for 5 minutes or until golden. Sprinkle with thyme sprigs. Serve.
