  • 2 tablespoons olive oil
  • 4 (about 400g each) lamb shanks, cut through the bone
  • 3 carrots, finely diced
  • 3 celery sticks, washed, dried, finely diced
  • 2 medium brown onions, finely diced
  • 8 garlic cloves, peeled
  • 1 x 400g can whole peeled tomatoes
  • 250mls (1 cup) Massel beef stock
  • 125mls (1/2 cup) white wine
  • 1 1/2 tablespoons fresh thyme leaves
  • Salt & ground black pepper, to taste
  • Creamy mashed potato, to serve


  • Step 1
    Heat 2 teaspoons of the olive oil in a large, heavy-based saucepan over medium-high heat. Add 1/2 of the lamb shanks and cook for 2 – 4 minutes or until browned all over. Remove from the pan and repeat with another 2 teaspoons of olive oil and the remaining lamb shanks. Remove from the pan.
  • Step 2
    Add the remaining olive oil and heat over medium heat. Add the carrots, celery, onions and garlic. Toss to coat in the oil. Reduce heat to low, cover and cook, stirring occasionally, for 10 minutes.
  • Step 3
    Add the undrained tomatoes, stock, wine and 1 tablespoon of the thyme leaves. Stir to combine. Return the lamb shanks to the pan.
  • Step 4
    Bring to the boil over medium heat. Reduce heat to low, cover and cook for 2 – 2 1/4 hours, stirring occasionally, or until the meat is very tender and starting to come away from the bones.
  • Step 5
    Stir in the remaining thyme leaves and season well with salt and pepper. Serve with creamy mashed potato.
