  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 800g beef chuck steak, chopped
  • 2 cups beef stock
  • 1/4 cup tomato paste
  • Mashed potato, to serve


  • Step 1
    Preheat oven to 160C or 140C fan.
  • Step 2
    Heat oil in an ovenproof casserole dish on medium. Cook onion, carrot and celery, covered, for 10 mins, until softened. Remove vegetables from pan. Increase heat to high. Cook beef in batches, for 2-3 mins, until browned all over. Return vegetables to pan with stock and tomato paste. Season well and bring to boil.

    Cover and bake for 3 hours, until beef is very tender. Serve with mashed potato.
