  • 2/3 cup long-grain rice, cooked (2 cups)
  • 1 tablespoon (20g) butter
  • 1 medium brown onion, finely diced
  • 2 cups diced celery
  • 4 middle bacon rashers, finely diced (about 1 cup)
  • 1 tablespoon finely diced garlic (about 4 cloves)
  • 2 x 500g packets Coles 3 star beef mince
  • 1 tablespoon chopped fresh thyme
  • 1/2 cup chopped parsley
  • 1/4 cup pine nuts
  • 1 cup grated parmesan cheese
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper
  • 1 large green drumhead cabbage
  • 1400ml tomato passata
  • 2 tablespoons sour cream

  • Step 1
Place large frying pan over medium heat, add butter, once melted add onion, celery and bacon and cook for 5 minutes. Add garlic and cook for a further 2 minutes.
  • Step 2
Place beef mince in a large mixing bowl, add thyme, parsley, pine nuts, parmesan, rice, the onion and bacon mixture, then season with the salt and pepper. Mix well with your hands until well combined. Set mixture aside.
  • Step 3
    Preheat fan-forced oven to 180°C.
  • Step 4
Place a large stockpot filled 2/3rds with water over high heat and bring to the boil.
  • Step 5
Place cabbage on flat surface and remove core by taking a pairing knife and deeply cutting around the edge of the core in a square shape and then remove core. Place cabbage in boiling water, as the leaves become soft they will be easily removed. Reserve the tough outer leaves to line a large casserole dish, do not use them to make cabbage rolls. Line large casserole dish with tough outer leaves.
  • Step 6
Using 12 whole inner cabbage leaves, place on a flat surface, take about 1/2 cup of mince mixture and form a log at the base of the leaf then roll in edges and roll the leaf onto itself to enclose mixture completely. Place in casserole dish on cabbage leaves. Repeat with remaining mixture until there is no more space left in the casserole dish. If your casserole dish is large, create layers of cabbage rolls but separate the layers with extra cabbage leaves.
  • Step 7
Mix tomato passata with about 2 cups of boiling water, depending on the size of your casserole dish, mix and pour over the cabbage rolls, immersing them completely in the liquid. Top with extra cabbage leaves. Place lid on casserole dish, place in oven and bake for at least 60 minutes to around 90 minutes. The cabbage leaves should be really soft when they are ready.
  • Step 8
To serve, mix 2 cups of tomato juice with sour cream. Pour a little tomato juice over cabbage rolls, garnish with extra parsley and serve warm.
